This is a quick post because I have a million things that I am supposed to be doing right now, but I wanted to post while it is fresh in my mind and not wait until I forget. (I am seriously getting old.) This morning has been a bit rough around here to say the least, and I just got around to making breakfast for my little guy and myself a few minutes ago. I was thinking I would just fry up an egg or two really quickly and call it good enough, but something in me said that today called for something a little more special. I rummaged around in the fridge and within just a few minutes whipped up something that I dare say was pretty close to magical. It was comforting, healthy and 100% real food. And it was FAST. You could make this for breakfast even on a workday but it's fancy enough for a weekend or for company, or you could have it as a super easy weeknight meal. My 10 year old devoured it and proclaimed it delicious as well. I apologize in advance because I didn't take process photos and I didn't measure, as I was not planning to share, I was only trying to throw breakfast together. But it was so share-worthy that I can't help myself:) You can use your own judgement/preferences to determine amounts.
Iron Skillet Egg Medley (for lack of a better name)
Large Iron Skillet
1 Tablespoon Olive Oil
1 Tablespoon Butter (you can use a little more if you want, more butter is always better;)
1 pint sized container Baby Portobello mushrooms, washed well, stems removed and sliced thinly
1 clove garlic, crushed
Sea salt and fresh ground pepper to taste (this is the salt I use...it is A-mazing)
Splash of white wine
4 eggs
1 cup fresh spinach (or more)
1 small tomato, chopped
1/3 to 1/2 cup crumpled feta cheese
Heat iron skillet on medium heat.
Add oil and butter to pan and then add mushrooms and garlic.
Season with salt and pepper.
Saute for a minute or two and then add white wine. Continue to saute until mushrooms are cooked to your liking.
Push them to the outer edges of the pan and crack your eggs directly into the pan. Season with salt and pepper and carefully cook for a minute or two per side until they are almost done to your preference.
Just before they are completely done, remove skillet from heat (it will retain it's temperature and continue cooking for a few more minutes) and add spinach and tomato.
Stir carefully to combine, season with a little more salt and pepper if you prefer, and top with feta cheese.
Pretend you just slaved in the kitchen for hours and present this gourmet meal to your family.
